Other types of beans may be subsituted.
Ingredients
- 1 can cut green beans
- 1 can cut yellow beans
- 1 can kidney beans (drained and rinsed)
- 1/2 c coarsely chopped onion
- 1/2 c chopped green pepper or cucumber
- 1/2 cup salad oil
- 1/2 cup cider vinegar
- 1/4 tsp. Salt
- 1 cup sugar
- 1 tsp. Black pepper
Directions
Rinse and drain all beans in a colandar, while draining chop onions and dice
peppers. Place in large covered bowl and add sugar, salt and pepper. In a 2 cup
measure,combine oil and vinegar, mix and pour over bean and sugar mixture. Stir well and refrigerate at least 3 hours. This salad improves with age. May be kept up to one week.
