Ingredients

  • 1/2 c shredded Monterey Jack Cheese
  • 1/2 c ricotta or cottage cheese
  • 8 oz shrimp or crab meat, cooked
  • 3 scallions, sliced
  • 1/4 c canned diced green chilies, drained
  • 8 flour tortillas
  • Sauce ingredients:
  • 3 T flour
  • 3 T butter
  • 1 c milk
  • 1/2 c chicken broth
  • Salt, pepper and cayenne, to taste

Directions

Mix first five ingredients. Heat tortillas to soften. Fill tortillas with shrimp or crab filling and roll up. Place seam-side down in greased 9x11 pan. Spoon sauce over and bake 25-30 minutes at 350.

Melt butter. Whisk in flour. Stir in remaining ingredients. Cook until thickened, stirring constantly. While the crepes are in the oven, prepare rice and a vegetable to serve as side dishes. Serve sauce over crepes.
