Ingredients:
1/2 c shredded Monterey Jack Cheese1/2 c ricotta or cottage cheese 8 oz shrimp or crab meat, cooked 3 scallions, sliced 1/4 c canned diced green chilies, drained 8 flour tortillas Sauce ingredients: 3 T flour 3 T butter 1 c milk 1/2 c chicken broth Salt, pepper and cayenne, to taste
Directions:
Mix first five ingredients. Heat tortillas to soften. Fill tortillas with shrimp or crab filling and roll up. Place seam-side down in greased 9x11 pan. Spoon sauce over and bake 25-30 minutes at 350.Melt butter. Whisk in flour. Stir in remaining ingredients. Cook until thickened, stirring constantly. While the crepes are in the oven, prepare rice and a vegetable to serve as side dishes. Serve sauce over crepes. |
