Ingredients
- Approximately 20 pounds of smelt(silverside), cleaned and cut into 1-inch pieces.
- Layer fish and rock salt in a glass or crock container for 48 hours.Then wash and rinse. Boil together the following:
- 2 quarts white vinegar
- 4 tablespoons pickling spices
- 2 teaspoons alum
- 2 tablespoons dry mustard
- 4 tablespoons brown sugar
Directions
Let cool. Put smelt in jar with layers of onion and add pickling. If you like, add a small amount of hot peppers.
