Ingredients

  • Approximately 20 pounds of smelt(silverside), cleaned and cut into 1-inch pieces.
  • Layer fish and rock salt in a glass or crock container for 48 hours.Then wash and rinse. Boil together the following:
  • 2 quarts white vinegar
  • 4 tablespoons pickling spices
  • 2 teaspoons alum
  • 2 tablespoons dry mustard
  • 4 tablespoons brown sugar

Directions

Let cool. Put smelt in jar with layers of onion and add pickling. If you like, add a small amount of hot peppers.
