Sweet Pickled Smelt (Silverside) Recipe | |

Ingredients:
Approximately 20 pounds of smelt(silverside), cleaned and cut into 1-inch pieces.Layer fish and rock salt in a glass or crock container for 48 hours.Then wash and rinse. Boil together the following: 2 quarts white vinegar 4 tablespoons pickling spices 2 teaspoons alum 2 tablespoons dry mustard 4 tablespoons brown sugar
Directions:
Let cool. Put smelt in jar with layers of onion and add pickling. If you like, add a small amount of hot peppers. |
