Ingredients

  • 1 c Plain low-fat yogurt
  • 1/4 c Safflower oil
  • 2 tb White vinegar
  • 1 1/2 1/2" piece gingerroot, pared
  • 2 Garlic cloves
  • 1/4 c Loosely packed cilantro leaves
  • 1 tb Ground cumin
  • 1 tb Paprika
  • 1 ts Dry mustard
  • 1 ts Ground red pepper
  • 1 ts Salt
  • 3 1/2 lb Broiler-fryer, cut into 8 pieces
  • Lemon slices and parsley for garnish (opt.)

Directions

Yield: 4 servings

In food processor or blender container, process all ingredients except chicken; pour into 13 x 9" baking pan. Add chicken, turning pieces to coat well. Cover and chill at least 6 hours, turning chicken occasionally.

Preheat oven to 400 degrees. In same 13 x 9" baking pan arrange chicken in single layer; bake 40-50 minutes or until chicken is tender. Turn oven control to broil; broil chicken 5 minutes until golden. Garnish. Makes 4 servings.
