Ingredients

  • 8 cups apples - peeled and sliced
  • 1/2 cup sugar
  • 1 1/2 teaspoons cinnamon
  • 3/4 cup oil
  • 1 1/2 cups sugar
  • 3 eggs
  • 1 cup orange juice
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 2 1/2 cups unbleached all-purpose flour

Directions

Use Cortland, McIntosh, or Empire apples.

Prepare apples and toss with the 1/2 cup sugar and cinnamon.

Preheat oven to 350 F. Generously grease a 9 by 13 inch rectangular baking pan or a 10 inch spring-form pan.

Blend oil and sugar to combine. Beat or whisk in eggs, then orange juice and vanilla. Fold in salt, baking powder and flour to make a smooth, soft batter.

Spoon half of batter into prepared pan. Top with apples, then remaining batter.

Bake until cake is crusty and set on top, about 45 minutes.
