Ingredients
- 1-3 tablespoons extra virgin olive oil
- 2 tablespoons Vegetable Broth
- 1/2 cup sliced zucchini
- 1/2 cup sliced carrot
- 1/2 cup sliced potato
- 1/2 cup sliced celery
- 1/2 cup cauliflower florets
- 1/4 cup sliced mushroom
- 1/4 cup chopped fresh parsley
- 1/2 cup diced onion
- 1 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 2 whole bay leaves
- 1 cube vegetable boullion
- 1/4 cup chopped fresh dill weed
- 6 cups water
- 2 cups uncooked egg noodles
Directions
4 servings
In a large saucepan, heat the oil and vegetable broth and saute the vegetables about 10 minutes. Add the remaining ingredients, except Noodles, and let simmer over medium-low heat 25 minutes. Add the noodles and cook additional 10 minutes
