Vegetable noodle soup Recipe | |

Ingredients:
1-3 tablespoons extra virgin olive oil 2 tablespoons Vegetable Broth 1/2 cup sliced zucchini 1/2 cup sliced carrot 1/2 cup sliced potato 1/2 cup sliced celery 1/2 cup cauliflower florets 1/4 cup sliced mushroom 1/4 cup chopped fresh parsley 1/2 cup diced onion 1 teaspoon salt 1/4 teaspoon fresh ground black pepper 2 whole bay leaves 1 cube vegetable boullion 1/4 cup chopped fresh dill weed 6 cups water 2 cups uncooked egg noodles
Directions:
4 servingsIn a large saucepan, heat the oil and vegetable broth and saute the vegetables about 10 minutes. Add the remaining ingredients, except Noodles, and let simmer over medium-low heat 25 minutes. Add the noodles and cook additional 10 minutes |
