Ingredients

  • 2 cups all purpose flour
  • 1/2 cup firmly packed brown sugar
  • 2 tsps baking powder
  • 1-1/2 tsps ground cinnamon
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/3 cup shortening
  • 2 slightly beaten large eggs
  • 2/3 cup milk
  • 3 small apples, peeled, cored & chopped
  • (2 cups)
  • Fluffy Hard Sauce

Directions

Stir together flour, sugar, baking powder, cinnamon, salt & nutmeg. Cut in shortening till crumbly. Combine eggs & milk; add to dry ingredients, stirring just till moistened. Fold in apples. Turn into well-greased 2 lb coffee can with waxed paper lining bottom. Cover tightly with foil. Place can in crockery cooker. Add 1 cup warm water to cooker. Cover; cook on high-heat setting 4 to 4-1/2 hrs. Remove can from cooker. Cool 10 mins; unmold. Serve warm with Fluffy Hard Sauce.

FLUFFY HARD SAUCE:

Cream 2 cups sifted powdered sugar & 1/2 cup (1 stick) butter. Beat in 1 large egg yolk & 1 tsp pure vanilla extract. Fold in 1 stiffly beaten large egg white.
