Ingredients

  • 3 freshly boiled lobsters, shelled (about 2 1/2 cups lobster meat)
  • 3 hard cooked eggs, chopped
  • 1/2 cup sweet pickles, chopped
  • 1/2 cup mayonnaise
  • 1/2 small onion, finely minced
  • 1/2 tsp. salt
  • Fresh ground pepper, to taste

Directions

Cut lobster into bite size pieces. Add other ingredients and toss together. Serve on lettuce leaves.
