Newfoundland Lobster Salad Recipe

  Canadian Salad

Ingredients:
3 freshly boiled lobsters, shelled (about 2 1/2 cups lobster meat)
3 hard cooked eggs, chopped
1/2 cup sweet pickles, chopped
1/2 cup mayonnaise
1/2 small onion, finely minced
1/2 tsp. salt
Fresh ground pepper, to taste

Directions:
Cut lobster into bite size pieces. Add other ingredients and toss together. Serve on lettuce leaves.
Serves 4
