Ingredients

  • 1 cup sifted flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 can (1 lb.) corn kernels, drained
  • 2 eggs, separated
  • oil for deep-frying

Directions

Sift flour, baking powder and salt together into a bowl. Add corn and beaten egg yolks. Beat egg whites until stiff. Fold egg whites into corn mixture. Drop batter by the spoonful into hot oil and fry until browned. Drain on paper toweling. Yield: 8 servings
