Ingredients
- Salad
- 4 cups torn spinach or 2 cups spinach and 2 cups torn salad greens
- 1 cup sliced, hulled, fresh strawberries
- 1/2 small red onion, thinly sliced
- Poppy Seed Dressing
- 4 ounces plain non-fat yogurt
- 1 tablespoon honey (or to taste)
- 2 teaspoons poppy seeds (toasted for fuller flavor)
- Juice of 1/2 lemon
- Zest of 1/2 lemon
Directions
For Dressing: combine all ingredients. Refrigerate for a few hours (or overnight) to mellow flavors.
For salad: Combine greens, strawberries, and onion in a salad bowl. Top with dressing and toss to coat. Serve immediately.
Yield: 4-8 servings.
