Ingredients

  • 2 lb. lean ground beef
  • 1 large onion, chopped fine
  • 1/2 bell pepper, chopped
  • 2 eggs
  • 1 cup cracker crumbs
  • 1/2 cup milk
  • salt/pepper to taste
  • one can whole kernal corn, drained
  • barbeque sauce (I prefer Watkins brand)

Directions

Thoroughly mix all ingredients except corn and barbeque sauce. Roll out the mixture on waxed paper to approximately 3/4"" thickness. Spread the corn on top of the meat. Anoint with barbeque sauce. Roll into a log and place in an appropriately sized baking dish or pan. Add more barbeque sauce on top. Bake at 350 for 90 minutes or until done.
