Ingredients

  • 2 cups fresh or canned corn
  • 1 cup cooked black beans
  • 1 cup homemade or canned salsa
  • 1/2 cup minced red pepper (fresh or roasted)
  • salt, pepper - to taste
  • 2 tablespoons minced cilantro
  • 2 tablespoon minced parsley
  • 1/4 teaspoon cumin
  • 1 small garlic clove - finely minced
  • squirt or two fresh lemon juice
  • 2-4 tablespoons olive oil

Directions

Toss all ingredients together. Chill. Serve with fish, grilled chicken, omelettes, etc.
