Ingredients
- 2 cups fresh or canned corn
- 1 cup cooked black beans
- 1 cup homemade or canned salsa
- 1/2 cup minced red pepper (fresh or roasted)
- salt, pepper - to taste
- 2 tablespoons minced cilantro
- 2 tablespoon minced parsley
- 1/4 teaspoon cumin
- 1 small garlic clove - finely minced
- squirt or two fresh lemon juice
- 2-4 tablespoons olive oil
Directions
Toss all ingredients together. Chill. Serve with fish, grilled chicken, omelettes, etc.
