Corn and Black Bean Salsa Recipe

  Tex Mex Dips

Ingredients:
2 cups fresh or canned corn
1 cup cooked black beans
1 cup homemade or canned salsa
1/2 cup minced red pepper (fresh or roasted)
salt, pepper - to taste
2 tablespoons minced cilantro
2 tablespoon minced parsley
1/4 teaspoon cumin
1 small garlic clove - finely minced
squirt or two fresh lemon juice
2-4 tablespoons olive oil

Directions:
Toss all ingredients together. Chill. Serve with fish, grilled chicken, omelettes, etc.
