Ingredients

  • 4-1/2 cups water
  • 8 medium red potatoes-about 2-1/2 pounds
  • 2 tablespoons butter
  • 1/4 cup lowfat 1% milk
  • 1 teaspoon minced garlic

Directions

Pour the water into a 3-quart or larger saucepan. Cover and place over high heat. Meanwhile, scrub the potatoes. Cut any bruises or large eyes out. Slice the potatoes into 2-inch pieces.
When the water is boiling, add the potatoes carefully. Bring the water back to a boil and reduce heat to medium-high to maintain a steady boil, but no so hot as to boil over. Cook 10 minutes or until potatoes are fork-tender.
Remove from the heat and drain. Put the potatoes back into the saucepan and add the butter, milk and garlic. Using a potato masher, smash the potatoes until the desired consistency is achieved. Stir well, making sure the butter and garlic are well distributed. Serve immediately.
