Ingredients

  • 3 to 4 pound whole salmon, cleaned, head and tail intact
  • 1 lemon
  • Salt and pepper
  • Accompaniments:
  • Bearnaise sauce, recipe follows
  • Peas

Directions

Preheat the oven to 350 degrees.

Sprinkle the cavity of the salmon with salt, pepper and lemon juice. Wrap the salmon in foil and bake for approximately 15 minutes per pound. Serve with bearnaise sauce and peas.


Yield: 6 to 8 servings
