Ingredients
- Etoufee means "smothered" so any number of ingredients are possible.Basically a stew.. Long slow cooking.
- Chicken, beef or rabbit (about 3 pounds) cut up as for stewing
- 4-5 sliced onions
- 2 bell peppers, chopped
- garlic ( lots, or to taste!!)sliced or minced
- Creole seasoning (again , to taste)
- Cooked rice
- Creole Seasoning:
- 1/4 cup salt
- 1 Tbls.garlic powder
- 1 Tbls. black pepper
- 1 Tbls. Paprika
- 3/4 tsp. onion powder
- 1/4 tsp. cayenne pepper
- 1/4 tsp. dried thyme
- 1/4 tsp. dried oregano
- Mix all ingredients together. Store in a glass jar.
Directions
Brown onions, peppers,garlic, add creole seasoning, add meat and water (about 2 cups). Cook long and slow until meat is done and very tender. Some meats take a very long time and may require additional water. Check for seasoning. Serve over rice.
