Chicken, Beef or Rabbit Etoufee Recipe

  Cajun Stew

Ingredients:
Etoufee means "smothered" so any number of ingredients are possible.Basically a stew.. Long slow cooking.

Chicken, beef or rabbit (about 3 pounds) cut up as for stewing
4-5 sliced onions
2 bell peppers, chopped
garlic ( lots, or to taste!!)sliced or minced
Creole seasoning (again , to taste)
Cooked rice

Creole Seasoning:
1/4 cup salt
1 Tbls.garlic powder
1 Tbls. black pepper
1 Tbls. Paprika
3/4 tsp. onion powder
1/4 tsp. cayenne pepper
1/4 tsp. dried thyme
1/4 tsp. dried oregano

Mix all ingredients together. Store in a glass jar.

Directions:
Brown onions, peppers,garlic, add creole seasoning, add meat and water (about 2 cups). Cook long and slow until meat is done and very tender. Some meats take a very long time and may require additional water. Check for seasoning. Serve over rice.
