Ingredients

  • 4 large red bell peppers
  • 4 whole chicken breasts, skinned and boned
  • 1/4 cup finely chopped green pepper
  • 1/4 cup finely chopped onion
  • 1/4 cup melted butter or margarine
  • 1 1/2 cups crushed barbecue-flavored potato chips
  • 1 (3 oz.) can smoke-flavored deviled ham
  • 1 egg, slightly beaten
  • 1 (15 oz.) can tomato sauce
  • 1 tsp. oregano
  • 1 tsp. basil
  • salt and pepper to taste
  • 1/2 cup (2 oz.) shredded Cheddar cheese

Directions

Cut off tops of bell peppers; remove seeds. Cook peppers five minutes in boiling salted water to cover; drain. Set aside

Cut chicken into bite-size pieces. Cook chicken, chopped green pepper, and onion in butter over medium heat five to seven minutes, stirring frequently. Drain well.

Combine chicken mixture, potato chips, ham, and egg; mix well. Fill red bell peppers with mixture; place in a 1-3/4 quart shallow baking dish. Mix tomato sauce, oregano, basil, salt, and pepper. Pour tomato sauce mixture over and around peppers. Bake at 375 deg. for twenty-five minutes. Sprinkle cheese over peppers; bake an additional five minutes.
