Ingredients

  • Egg substitute equivalent to 3 eggs
  • 2 cups unsweetened applejuice
  • 1/3 cup milk
  • 1/3 cup vegetable oil
  • 4 tsp vanilla extract
  • 1 package (18-1/4 oz.) white cake mix
  • i package (.8 oz.) sugar-free vanilla cook-and-serve pudding mix
  • 2 TBS brown sugar substitute
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg

Directions

In a mixing bowl, beat egg substitute for one minute on med. speed. Add applesauce, milk, oil and vanilla; mix well.
Combine remaining ingredients; gradually add applesauce mixture. Beat on med. speed for 3 minutes. Pour into a 13-in. x 9-in. x 2-in. baking pan coated with nonstick cooking spray. Bake at 350 degrees for 35-40 minutes or until a toothpick inserted near the center comes out clean.


Makes 15 servings. One serving equals 224 calories, 261 mg sodium, trace cholesterol, 32 gm carbohydrate, 3 gm protein, 9 gm fat, Diabetic exchange: 2 fat, 1 starch, 1 fruit.
