Ingredients

  • 1- 2 to 3 lb. beef chuck roast
  • 1 can condensed Cream of mushroom soup
  • 1/2 package (1/4 cup) regular dry onion soup mix
  • 4 medium potatoes, peeled and quartered
  • 4 medium carrots, quartered crosswise

Directions

Trim excess fat from meat. Line shallow roasting pan with foil. Place meat in pan. Combine mushroom soup and onion soup mix; spread over roast.
Cover pan with foil; seal to edges. Bake in pre-heated 325*F. oven for 1 hour. Uncover; arrange potatoes and carrots around roast. Cover, continue baking about 45 minutes or until meat and vegetables are tender. Season to taste.
