Ingredients
- 1-3/4 cups all-purpose flour
- 2 teapoons baking powder
- 1/4 teaspoon soda
- 3/4 teaspoon salt
- 1/3 cup shortening (or margarine)
- 2/3 cup sugar
- 2 eggs
- 1 cup mashed very ripe bananas (2 or 3, more to taste)
Directions
Sift flour, measure and resift 3 times with baking powder, soda, and slat. Cream shortening and sugar until light and fluffy.
Add eggs one at a time and beat well after each addition. Add bananas and mix. Add flour in 4 portions and beat until smooth after adding each portion.
Turn into a well-greased pan (8 x 4 x 2-1/2 inches) and bake in moderate oven (350 0F.) for 50 minutes or until bread tests done. Cool on rack before slicing.
Yield: Makes 1 loaf
