Ingredients
- 4 pork rib or loin chops, 1/2 inch thick
- 1 tsp salt
- 1 TBS oil or shortening
- 1-1/3 cups (1-lb. can) apricot halves (drain and reserve liquid)
- Reserved apricot liquid, plus water added to make 1-1/2 cups
- 2 TBS cornstarch
- 2 tsp lemon juice
- 2 TBS slivered almonds
Directions
Sprinkle chops with salt. Brown in oil on both sides in fry pan. Add 1/2 cup of the apricot liquid. Cover; reduce heat and simmer for ten minutes. Combinde cornstarchand remaining 1 cup apricot liquid; Add to chops. Continue simmering, stirring frequently, until liquid thickens. Add apricots and almonds. Cover; continue to simmer 10 minutes. Serve.
