Ingredients

  • 2 pounds cubed, boneless, top sirloin steak
  • 3/4 cup coarsely chopped onion
  • 1 4-ounce can green chili salsa
  • 1 1/2 teaspoons chili powder
  • 1 tablespoon vegetable oil
  • 1/4 cup red wine vinegar
  • 1/4 teaspoon salt
  • Pepper to taste
  • 1/2 green bell pepper
  • 1 onion
  • 4 ounces whole fresh onions
  • Half a pint box cherry tomatoes
  • 1/2 of 1 8-ounce can pineapple chunks
  • 1 cup regular, uncooked rice

Directions

Combine cubed beef with chopped onions, salsa, chili powder, oil, red wine vinegar, salt and pepper; put in a 6-cup container and freeze.
To prepare for serving, thaw meat mixture. Remove meat from marinade. Cut bell pepper and onion into thick pieces to put on a skewer. Alternate meat, vegetables and pineapple on a skewer, and barbecue or broil. Baste with marinade while cooking. At the same time, prepare rice according to package directions. Serve Kebabs with rice.
