Ingredients
- 18 = oz pkg yellow cake mix
- 1/8 tsp baking soda
- 2/3 cup dark rum
- 2/3 cup water
- 2 eggs
- 1 cup mashed ripe bananas (2-3 medium sized)
- 1/3 cup finely chopped pecans or walnuts.
- Frosting:
- 1/3 cup butter or margarine (soft)
- 3 cups confectioners sugar
- 2 tsp vanilla extract
- 2 Tbsp dark rum
Directions
Cake:
Preheat oven to 350. Grease and flour two 9" cake pans. Combine all ingredients in large bowl. Blend well, then beat at medium mixer speed 2-4 minutes. Turn into prepared pans. Bake 25-30 minutes or until cake tests done. Cool completely. Frost.
Frosting:
Combine butter and confectioners sugar, and blend thoroughly. Stir in vanilla extract and rum. Beat until smooth.
