Banana Rum Cake Recipe

  American Cakes

Ingredients:
18 = oz pkg yellow cake mix
1/8 tsp baking soda
2/3 cup dark rum
2/3 cup water
2 eggs
1 cup mashed ripe bananas (2-3 medium sized)
1/3 cup finely chopped pecans or walnuts.

Frosting:
1/3 cup butter or margarine (soft)
3 cups confectioners sugar
2 tsp vanilla extract
2 Tbsp dark rum

Directions:
Cake:
Preheat oven to 350. Grease and flour two 9" cake pans. Combine all ingredients in large bowl. Blend well, then beat at medium mixer speed 2-4 minutes. Turn into prepared pans. Bake 25-30 minutes or until cake tests done. Cool completely. Frost.

Frosting:
Combine butter and confectioners sugar, and blend thoroughly. Stir in vanilla extract and rum. Beat until smooth.
