Ingredients

  • 1 red onion, sliced
  • 2 cloves garlic, chopped
  • 2 shallots, chopped
  • 2 Tbsp. oil
  • 1 lb. fresh green beans
  • 2 C. tomatoes, chopped
  • juice of 1 lime
  • juice of 1 orange
  • 1/2 tsp. cumin
  • 1/2 tsp. coriander
  • salt
  • pepper
  • 1/2 C. olive oil

Directions

Heat oil in skillet. Add onion, garlic, shallots & cook quickly, leaving onions slightly crisp. Put in serving bowl. Let cool.
Cook beans in boiling, salted water for approximately 4 minutes, leaving beans crisp. Drain & let cool down. Put in bowl with onion mixture.
Add tomatoes, lime juice, orange juice, cumin, coriander, salt, pepper & olive oil to beans & onions. Mix well. Let sit in refrigerator 1 hour before serving.
