Green Bean Salad Recipe | |

Ingredients:
1 red onion, sliced2 cloves garlic, chopped 2 shallots, chopped 2 Tbsp. oil 1 lb. fresh green beans 2 C. tomatoes, chopped juice of 1 lime juice of 1 orange 1/2 tsp. cumin 1/2 tsp. coriander salt pepper 1/2 C. olive oil
Directions:
Heat oil in skillet. Add onion, garlic, shallots & cook quickly, leaving onions slightly crisp. Put in serving bowl. Let cool. Cook beans in boiling, salted water for approximately 4 minutes, leaving beans crisp. Drain & let cool down. Put in bowl with onion mixture. Add tomatoes, lime juice, orange juice, cumin, coriander, salt, pepper & olive oil to beans & onions. Mix well. Let sit in refrigerator 1 hour before serving. |
