Ingredients

  • 1 pound (2 1/2 cups) dried navy beans
  • 2 teaspoons baking soda
  • 1/4 cup brown sugar
  • 1/2 cup ketchup
  • 3 cups fat-free chicken broth
  • 1 large onion, finely chopped
  • 1 teaspoon dry mustard
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons salt
  • 1/2 pound lean ham, diced
  • 2 tablespoons barbecue sauce, optional

Directions

Wash bean and sort for stones. Place beans and baking soda in a large soup pot and cover with water. Bring to a boil and boil for 2 minutes. Cover and remove from heat and let stand for at least 1 hour or overnight. Pour off water. Add all remaining ingredients except barbecue sauce. Bring to a boil. Place in a 4 quart casserole. Cover and bake at 275 degrees for 4 to 6 hours or until beans are tender.

Check occasionally and add additional broth or water if beans get too dry. Add barbecue sauce for extra flavor if desired.
