Ingredients

  • 1 eggplant, peeled and sliced
  • 1 lb. ground lamb or ground chuck
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1 1-lb. can tonatoes
  • 1/2 tsp. oregano
  • 1 tsp. salt
  • 1/8 tsp pepper
  • 1 TBS. olive oil
  • 1/2 cup cottage cheese or ricotta
  • 2 eggs, slightly beaten
  • nutmeg

Directions

Saute' meat, onion, and garlic until meat is brown. Drain well. Add tomatoes, oregano, salt, pepper. Simmer 10 minutes.
Brush eggplant slices with olive oil and broil for 5 minutes on each side. Make layers of eggplant and meat sauce in a greased casserole. Top with the cottage cheese or ricotta, and beaten together eggs. Sprinkle with a little nutmeg. Bake in a preheated 350 degree oven for two hours. Serves 4.
