Ingredients:
1 eggplant, peeled and sliced1 lb. ground lamb or ground chuck 1 medium onion, chopped 1 clove garlic, minced 1 1-lb. can tonatoes 1/2 tsp. oregano 1 tsp. salt 1/8 tsp pepper 1 TBS. olive oil 1/2 cup cottage cheese or ricotta 2 eggs, slightly beaten nutmeg
Directions:
Saute' meat, onion, and garlic until meat is brown. Drain well. Add tomatoes, oregano, salt, pepper. Simmer 10 minutes.Brush eggplant slices with olive oil and broil for 5 minutes on each side. Make layers of eggplant and meat sauce in a greased casserole. Top with the cottage cheese or ricotta, and beaten together eggs. Sprinkle with a little nutmeg. Bake in a preheated 350 degree oven for two hours. Serves 4. |
