Ingredients

  • 6 pound beef brisket
  • 1 tsp salt
  • 1/2 tsp pepper
  • Sauce
  • 2 tb Unsalted butter
  • 1 ea Onion, finely chopped
  • 2 ea Garlic cloves, minced
  • 1 ea Bay leaf, crumbled
  • 2 c Ketchup
  • 3/4 c Coca-Cola
  • 1 tb A-1 Sauce
  • 1 t Dijon mustard
  • 2 ts Wine vinegar
  • Salt and pepper to taste

Directions

Trim excess fat from brisket and place fat side up in a roasting pan. Sprinkle with salta and pepper. Place onion slices over meat. Bake uncovered at 350* for 1-1/2 hours. Make sauce. Pour over brisket. Cover with aluminum foil and bake 2 hours more or until tender, spooning sauce over brisket occasionally.

Sauce:
Melt butter in medium saucepan over medium-low heat. Add onions and cook 1 minute. Add garlic and cook 4 minutes longer. Do not brown. Stir in remaining ingredients. Heat to boiling; reduce heat and simmer, uncovered, stirring occasionally, 1 hour.
