Ingredients

  • greek-style plain yoghurt
  • lemon juice
  • lebanese or continental cucumbers
  • garlic

Directions

To thicken yoghurt, drain through a cheesecloth-lined sieve for several hours (overnight in the fridge is ideal)
De-seed cucumbers; peeling is optional. if you've got time you can also drain these overnight in the fridge.
Cut up garlic finely; one clove is probably enough
Add cucumbers to yoghurt gradually until desired consistency is achieved; mix in garlic, and cut with a small amount of lemon juice to taste.
