Ingredients

  • 1 can (15-16 oz) chick peas, drained
  • 1 tbsp olive oil
  • Juice of 2 lemons
  • 4 cloves garlic, peeled
  • Salt and pepper to taste
  • 1/2 cup tahini (sesame seed paste with oil)
  • 1 tsp strong paprika
  • = t cumin
  • Dash of cayenne
  • Cilantro to taste

Directions

Place chick peas, olive oil, lemon juice and garlic in processor and puree. Add remaining ingredients. Blend until creamy. If mixture is too thick, add a little more lemon juice. Garnish with Kalmata or regular black olives and serve with pita, lavosh or thin crackers.


Makes 2 cups.
