Ingredients

  • 1/4 cup diced onion
  • 5 tablespoons butter or margarine, divided
  • 2 tablespoons flour
  • 1/2 cup water
  • 1/2 cup milk
  • 8 ounces Cheese Whiz
  • 2 1/2 cups broccoli, chopped, cooked, drained (frozen is fine)
  • 3 eggs, beaten
  • 1 cup Ritz or other buttery type cracker crumbs

Directions

Preheat oven to 350 degrees. Saute onion in 2 tablespoons margarine; cook and stir about 2 minutes. Stir in flour. Stir in water and milk; stir until thickened. Remove from heat; stir in Cheese Whiz. Put cooked broccoli in bottom of a 2 quart greased casserole dish. Stir 1/2 cup of milk mixture into eggs; then stir eggs into remaining milk mixture. Pour over broccoli in casserole.

Melt remaining 3 tablespoons margarine in skillet. Stir in cracker crumbs, turning to coat well. Spread crumbs over top of ingredients in casserole. Bake at 350 degrees 35 - 40 minutes , until set. (Tastes like a crustless quiche.
