Ingredients

  • 1 lb. mahi-mahi or red snapper fillets, cut into 1 inch cubes
  • 1 Tbs. vegetable oil
  • 2 carrots, thinly sliced diagonally
  • 1 medium onion, thinly sliced
  • 3 zucchini, cut in 1/4 inch slices
  • 1/4 tsp. fresh thyme leaves, crushed

Directions

Sprinkle mahi-mahi cubes with pepper to taste and set aside. Heat oil in a heavy nonstick skillet or wok over medium high heat. Stir-fry vegetables with thyme 4-5 minutes until vegetables are tender-crisp. Add fish and stir-fry 3-4 minutes until fish turns opaque.
