Ingredients

  • 1 large eggplant
  • 1 cup Italian breadcrumbs
  • 1/2 cup milk
  • 2 eggs, beaten
  • oil for frying

Directions

Peel eggplant, and cut into bite sized pieces. Mix milk and beaten eggs. Dip eggplant pieces into egg mixture, then into breadcrumbs, coating well. Place coated eggplant pieces in hot oil and fry till golden brown.
