Ingredients

  • Eggplant
  • salt
  • Olive oil

Directions

Slice eggplant lenghtwise into even thin slices. Sprinkle with salt:this will remove some of the bitterness.After 5 minutes,rinse under water. Pat dry ,
Brush with good olive oil . BB-Q or broil till soft but not mushy. Enjoy.
I eat it hot or cold. Some times combined with fresh tomato slices, bell peppers, onions and garlic.
