Ingredients

  • 20 oz frozen chopped spinach
  • 2 C seasoned croutons or stuffing mix
  • 2 eggs, beaten
  • 1/2 C butter, melted
  • 1/2 C grated Parmesan cheese
  • 1/2 tsp thyme
  • 1 clove garlic, minced
  • 1 lg onion, minced
  • Salt & pepper

Directions

Thaw spinach; drain well by squeezing out juice. Crush croutons lightly by using rolling pin. Combine all ingredients and chill 2 hours or more. Shape into 1"" balls and place in pie pans or cookie sheet. Bake at 400* for about 15 minutes
