Ingredients

  • 1-1/2 Tbs. unsalted butter
  • 1/2 cup cucumber, peeled, seeded and finely chopped
  • 1/3 cup bottled roasted red bell peppers, chopped
  • 1/4 tsp. salt optional, or to taste
  • 1/4 tsp. pepper
  • 3 Tbs. lemon juice
  • 1-1/2 lbs. skinless grouper fillets

Directions

Melt half the butter in a heavy nonstick skillet over medium heat. Sauti cucumber 3-4 minutes or until softened. Stir in roasted bell pepper, salt, pepper and half the lemon juice. Transfer to a bowl and set aside. Wipe skillet clean. Melt remaining butter in skillet over medium heat. Season fish fillets with salt and pepper to taste. Sauti 4-5 minutes per side or until fish flakes easily. Drizzle with remaining lemon juice. Serve grouper topped with roasted peppers and cucumber.
