Ingredients

  • 225 g pasta (I use the little horn-shaped noodles)
  • 500 g fresh tomatoes, skinned and chopped, or an equivalent amount of canned tomatoes
  • 3 tbsp olive oil
  • 200 g feta cheese, cubed
  • 5 spring onions, trimmed and sliced
  • 75 g black olives, pitted
  • 2 tsp Herbes de Provence herb mix

Directions

Cook the pasta according to the instructions on the pack and drain. Mix with the other ingredients in a bowl. Let rest for some time (even overnight) in a cool place before serving.
