  • 2 1/2 lbs. red onions, cut in 1/4-inch wedges
  • 3 tablespoons salad oil
  • 1/2 cup white wine
  • 1/2 cup red-wine vinegar
  • 1/2 cup sugar
  • 1 tablespoon grenadine
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper


1. In a large glass bowl, combine onion wedges with oil. Cook, uncovered, on HIGH 8 to 10 minutes, stirring occasionally. Drain and discard any liquid.

2. Add wine, vinegar, sugar, grenadine, salt and pepper; mix well. Cook, uncovered, on HIGH 15 minutes, stirring occasionally. Spoon into five 1/2-pint sterilized jars; seal with lids. Refrigerate. Serve marmalade with meat or pate. Makes 4 1/2 cups
