Ingredients

  • 8 ounces salt pork, diced , or substitute bacon
  • 2 medium onions, chopped
  • 1/2 cup celery, chopped
  • 1 bay leaf, crumbled
  • 4 cups water
  • 3 cups diced potatoes
  • 2 cups cream style corn
  • 1 can whole kernel corn, drained
  • 2 cups evaporated milk
  • Salt and pepper
  • 1/2 teaspoon dried parsley
  • Paprika

Directions

In large kettle, cook salt pork or bacon until browned and crisp. Remove salt pork or bacon and pour off all but 3 tablespoons fat. Add onions, celery and bay leaf; cook and stir for 5 minutes. Add water and potatoes. Bring to boil; lower heat, simmer, covered until potato is tender, about 12 minutes. Add corn and milk; heat well. Season to taste with salt and pepper. Return salt pork or bacon
