Ingredients:
8 ounces salt pork, diced , or substitute bacon2 medium onions, chopped 1/2 cup celery, chopped 1 bay leaf, crumbled 4 cups water 3 cups diced potatoes 2 cups cream style corn 1 can whole kernel corn, drained 2 cups evaporated milk Salt and pepper 1/2 teaspoon dried parsley Paprika
Directions:
In large kettle, cook salt pork or bacon until browned and crisp. Remove salt pork or bacon and pour off all but 3 tablespoons fat. Add onions, celery and bay leaf; cook and stir for 5 minutes. Add water and potatoes. Bring to boil; lower heat, simmer, covered until potato is tender, about 12 minutes. Add corn and milk; heat well. Season to taste with salt and pepper. Return salt pork or bacon |
