Ingredients

  • 4 English muffins, halved and toasted
  • 8 slices baked ham
  • 1/4 cup butter
  • 8 eggs
  • Marchand de Vin sauce (recipe below)
  • Put rusks on plate 2 to a plate. Put 8 slices baked ham sauteed in 1/4 cup butter, one on each rusk. Poach 8 eggs and place one on each rusk. Sppon hot Marchand de Vin sauce over eggs and serve hot. Serves 4 people

Directions

Place 2 English muffin halves on each plate. Saute the ham in the butter. On each muffin half, place 1 slice ham. Poach the eggs, and top each ham slice with a poached egg. Cover eggs with Marchand de Vin sauce. Serve immediately. Serves 4.
