Ingredients

  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Italian herbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 lbs Italian sausage links
  • 3 bell peppers -- cut into 2" pieces
  • 2 red onions -- cut into wedges
  • 2 large zucchini -- cut into pieces

Directions

Preheat oven to 425. In a large bowl, combine oil, vinegar, Italian herbs, salt and pepper. Add sausage links, bell peppers, onions and zucchini; toss to coat thoroughly. Transfer to a large roasting pan and roast 30 minutes. Turn vegetables and sausages and baste with pan juices. Roast 15 minutes longer, or until sausages are cooked through.
