Ingredients

  • 4 boneless chicken breasts
  • 1/4 cup quick-mixing all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 tablespoon ground black pepper
  • 1/2 teaspoon dried oregano
  • 4 tablespoons olive oil
  • 4 tablespoons butter or margarine
  • 1 cup sliced fresh mushrooms
  • 1/2 cup fine (sweet) Marsala wine
  • 1/4 cup white cooking sherry

Directions

1- Pound chicken breasts until flat and thin. Set aside.

2- In a shallow dish or bowl mix together the flour, salt, pepper and oregano.

3- Put oil and butter/margarine in a large skillet and heat until melted and bubbling. Coat/dredge chicken in flour mixture, shake off excess and brown in skillet until lightly browned (about 2 minutes). Turn over chicken pieces and add mushrooms. Brown until lightly browned (about 2 minutes). Turn over chicken pieces again. Add wine and sherry. Cover skillet and simmer all together for 10 minutes, turning chicken pieces once.


Makes 4 servings.
